Barbecue marinated Chicken with roast corn salsa

For the Chicken:

For the Marinade:

Method:

Blitz all the marinade ingredients together then toss the chicken thighs in the marinade, place in a marinade bag and leave for several hours in the refrigerator.

 

  Roast Corn and avocado relish:

 

  • 2 Avocados peeled stoned and chopped
  • 2 Corn on the cob (drizzle with oil wrap in foil roast in hot oven 30mins)
  • Red onion very finely chopped
  • ½ red chilli finely chopped
  • 1 Tbsp Fresh coriander chopped
  • 2 Limes juiced
  • 2-3 tbsp Crème fraiche
  • Salt and ground pepper

 

Method:

Remove roast corn from foil and scrape corn from cob, combine all the ingredients and season to taste.

 

To serve using Barbecue Bens know how!! Cook chicken until nicely coloured and thoroughly cooked accompany with a good Dollop of corn and avocado relish.
