Thai Scallops

Serves 4

Give your scallops an exotic oriental twist…

Ingredients

  • 12 fresh scallops in their half shell
  • 3 finely chopped shallots
  • 2 tsp Thai seasoning
  • 1 lemon, grated rind and juice
  • 2 finely chopped green chillies
  • 2 finely chopped red chillies
  • Olive oil
  • Pinch salt and pepper

Method

  1. Sprinkle all the ingredients over the scallops evenly.
  2. Position a grill rack over the coals to heat.
  3. Place the scallops in their half shells on the grill and cook for 2-3 minutes.
  4. Transfer onto a serving platter and enjoy.
